About the Winery & Region

Paul Dolan was a true leader in organic and biodynamic viticulture in Mendocino County. Long before sustainability became a selling point, he pushed for vineyard practices that protected the soil, promoted biodiversity, and respected the natural environment. His belief was straightforward: when the vineyard thrives as an ecosystem, the wine becomes more expressive.


The Cabernet comes from Mendocino’s warm inland valleys, where long sunny days ripen the fruit beautifully, and cool nights preserve acidity. This creates a Cabernet that’s structured yet fresh — a classic Mendocino hallmark.

Personal Tasting Notes

When I tasted it, the first thing that jumped out was the purity of the fruit — think black cherry and ripe plum, but not overly sweet. There’s this subtle graphite and baking spice character that adds depth without getting in the way. On the palate, it’s surprisingly smooth, with tannins that feel polished rather than aggressive. The finish lingers with a warm cocoa note and just a hint of cedar. It’s one of those wines you take a sip of and immediately think, “Yep, this is why people love Cabernet.”
