2023 Pavette

Cabernet Sauvignon

With a name that translates to “little peacock,” Pavette represents one of the most ambitious projects from the team behind Valkyrie Selections acclaimed labels like Loren Crossing (Napa Valley) and Valravn (Sonoma County).


According to Rob Fischer, director of winemaking, this is perhaps their most challenging endeavor—he often jokes about having to “kiss a lot of frogs” to find exceptional fruit that can deliver quality at an accessible price point. The solution? Sourcing premium Cabernet Sauvignon from Monterey County’s Central Coast, where the cool maritime influence and extended growing season allow grapes to develop rich flavors while maintaining balanced acidity, then augmenting with a few small parcels from their Valravn Sonoma County vineyards.


2023 California Cabernet Sauvignon

100% Cabernet Sauvignon


This pure expression of Cabernet Sauvignon undergoes whole berry primary fermentation and malolactic conversion in tank, followed by extended aging in a thoughtful regimen of oak barrels, foudre, and tank. Fischer’s meticulous blending approach combining the best Central Coast fruit with a sprinkle of choice Sonoma lots—creates beautiful integration throughout. Ripe black cherry and cassis dominate the palate, complemented by hints of cedar and mocha, with medium-firm tannins providing structure and a smooth, toasty-oak finish.


When we opened this bottle, we were impressed by how the wines careful sourcing and blending. The fruit is lush and inviting, with the Sonoma components adding an extra layer of refinement. Perfect for pairing with grilled meats, barbecue, or hearty pasta dishes. This is California Cabernet that punches well above its weight – Salut!
