Bootleg Paso Robles Cabernet Sauvignon

Paso Robles has become a go-to-spot for Cabernet Sauvignon from California. The climate and soils allow the grape to thrive and this month our wine of the month is a great representation of how Cab can thrive and deliver from this hot spot.

Bootleg Cabernet Sauvignon is aged in French 95% & American 5% oak for 11 months, 24% new, the 98% Cabernet Sauvignon 2% Malbec is a scintillating expression of Paso Robles. Boasting well-integrated tannins, bright acidity, and a smooth, long finish. With the long, lingering finish carrying echoes of spice and toasted oak, and balancing intensity. Paso Robles' signature combination of bold fruit and freshness is on full display, giving this Cabernet Sauvignon both approachability and aging potential.

Equidistant between San Francisco and Los Angeles, the unique soils and chilly night air of Paso Robles allows Ben Salazar our winemaker to emphasize the sweet spot where exuberance meets precision. Bootleg is a fresh, unconstrained Cabernet Sauvignon that spills onto the palate like ink, it ushers in silkiness, then unpacks complex flavors that brilliantly complement a variety of cuisine.

The Tasting Panel rated the Bootleg Cabernet Sauvignon 90 points and said the following;

Honest and straightforward in its ripe style, this gutsy Cabernet achieves good balance between the sweet core of dark cherry and blackberry fruit with some pleasantly grippy tannins. The pure sweetness of the fruit will permit cocktail-style sipping for those who enjoy structured reds while enabling this to also work well at the table.

When we popped open the Bootleg Cabernet, we encountered a wine that was big, bold, and smooth. Dark fruits of cassis and raspberry paired with spices like cola led to a bold finish that was also bright and made us smile. Warm weather is coming and this cab will pair well with a steak or BBQ but until you get out the smoker simply enjoy on its own!
